Grape Sugar and RCM
Our Grape Sugar (for the food sector) or RCM (rectified concentrated grape must for the wine sector) is entirely produced in Italy at our plant in Trebaseleghe, in the province of Padua.
The product is completely colourless and odourless and it is distributed exclusively in liquid form.
The sugar concentration varies according to customer requirements, with a range of 65 to 70 Brix.
The product is sucrose-free and consists of approximately 49.5% fructose, 49.5% glucose and 1% minor sugars.
Manufacturing processes
Demineralization
The first step in obtaining the product is extracting the sugar component from the grape must.
This is achieved through a process of demineralization, i.e., an ionic exchange between cationic and anionic resins, which purifies the grape must of mineral salts, acids and all its organoleptic components, transforming it into a mixture consisting solely of grape water, glucose and fructose.
Concentration
Once the sugar has been extracted, we carry out the concentration process by evaporating the water component, thus giving the product its distinctive consistency and density.
During the concentration process, the product reduces its total volume by about four times. This provides a double logistical advantage: less storage space and lower transport costs.
Quality figures
We can count on a technically advanced industrial facility, which covers an area of 45.000 m2, with a total storage capacity of 75.000 tonnes and a capacity for storing SO2 Free products in aseptic tanks of 13.000 tonnes, to guarantee our customers constant quality and quantity over time. The diversification of the production processes, combined with high storage capacities and a solid distribution network, enables us to guarantee a constant cycle of processing and delivery of the final product, regardless of the quantity and type required by the customer.
Laboratory analyses and certifications
Starting from the selection of raw materials, to the processing, storage and distribution of our products, every process is rigorously monitored by our in-house testing laboratory and by external laboratories. We have thus obtained numerous quality certifications such as FSSC22000, la ISO9001, the more prestigious IFS and BRC, as well as Organic, SGF and Halal.

As the first industrial company in the country to promote sustainable viticulture, we are proud to cooperate with FSA (Farm Sustainability Assessment) certified wineries. Thanks to them, we are able to distribute a Grape Sugar made with respect for the land and those who work on it.
